If you are craving comforting pancakes but want them to be protein-packed too, this is for you. Make this for a lazy weekend morning, or for when you feel like treating yourself to a hearty breakfast on a weekday!
Ingredients
- One serving of Lucuma Almond Spice chia protein pudding supermeal. We have linked the recipe of how to make it from scratch, given its not available yet!
- 2 tbsp of keto flour (we used almond)
- Optional: 1 tsp. of coconut or avocado oil
- Approximately 1/2 cup of milk (replace with greek yogurt or soymilk for extra protein!)
- Half a tsp of baking powder
Optional Flavors and Add-ins
- Chocolate Chip Pancakes: Stir in 1 tablespoon mini chocolate chips.
- Blueberry Pancakes: Stir in 1/3 c. blueberries.
- Apple Spice Pancakes: Stir in 1/3 c. of sliced apples plus 1/3 cup of applesauce.
- Banana Walnut Pancakes: Mash half a ripe banana and stir in the banana and 1 tablespoon of crushed walnuts.
- Pumpkin Spice Pancakes: Mix in 1/2 tsp of pumpkin spice, and 1/3 c. pumpkin puree.
