I developed these Egg-Free, Gluten-Free Pumpkin Spice Biscuit Bars to donate to a hurricane Milton relief sale, wanting to create something easy to share that’s both comforting and delicious.
These bars feature a crunchy coconut streusel (made from chia pudding!!) and decadent chocolate chips, making them a crowd-pleaser.
They’re perfect toasted for an extra crunch, and if you’re feeling indulgent, try them with a little melted butter on top.
Whether you’re preparing for a storm or just looking for a treat, these bars are a satisfying, cozy snack.

Ingredients
Frosting
- 1 Servings of Nourish Chia Protein Pudding Supermeal (We have linked the recipe of how to make it from scratch, given its not available yet!)
- 1/2 cup Unsweetened Coconut flakes
- Semi-sweet chocolate chips
- 1/2 cup Powdered Sugar (We used Wholesome Fair trade Organic Powdered Sugar)
- 1 TBSP Pumpkin Spice
Bars
- 2 Servings of Nourish Chia Protein Pudding Supermeal
- 1/2 cup powdered sugar
- 1 can of Pumpkin puree
- 2 TBSP Pumpkin Spice
- 1 cup of milk (we used grass-fed organic 2% milk)
- 1/4 cup olive oil
- 1/2 cup heirloom corn masa (we love Macienda)
- 2 tsp baking powder
- 2 cups coconut flour (we used Z natural foods organic coconut flour)
- 1/2 cup Lucuma Powder (We used TerraSoul's organic Lucuma Powder)
- 1/4 cup of date paste (we used Date Lady's organic Paste)
Instructions
1. Mix all the dry ingredients for the bars (excluding the chia pudding mix).
2. Mix all the wet ingredients for the bars (including the chia pudding mix).
3. Fold in wet ingredients into dry ingredients.
4. It should have a doughy consistency. Scoop dough into well-oiled pan and shape into square pieces.
5. Bake for 12-15 minutes or until golden brown.
6. For the frosting, mix all ingredients together and add water until it turns into a pudding-like consistency. We used a food processor, but you can manually mix it. We also added in any of the baked bars that had broken in the batter to create a "crumbly" streusel like consistency.
7. When bars are cooled, spread frosting on top of them. Top with chocolate chips!
