Lucuma Almond Spice Chia Protein Pudding

Lucuma is an Andean prebiotic superfood that has a delicious, creamy maple-caramel flavor—making it perfect for our gut-healthy chia protein pudding! If you can’t wait until our release date to try it from us, get a sneak peak of its superfood goodness by making it yourself.

You can have this as a breakfast as a nourishing alternative to blood sugar spiking maple brown sugar oatmeal. Or, if you want a quick and portable workout snack, put all of the ingredients into your protein shaker, add water, shake, and eat after your workout (we recommend eating it with a spoon!)

Serving size: 1

Ingredients

  • 1-2 tbsp chia protein
  • 1-2 tbsp of a scoop of unflavored pea protein
  • 1-2 tbsp brown rice protein
  • 1-3 tsp lucuma powder
  • 1 heaping teaspoon organic powdered coconut milk
  • 1.5 tsp organic unsweetened shredded coconut
  • 2 tsp slivered almonds
  • A pinch of monk fruit 
  • A pinch of cinnamon and ginger

Directions

  1. Mix all ingredients together.
  2. Add water or liquid of choice (mylk makes it extra creamy)!
  3. Stir until it starts to thicken into a pudding-like texture.
  4. Continue adding water/ mylk until desired creaminess is achieved.
  5. Serve on its own, or top with fresh fruits, a drizzle of nut butter, or more almonds!
